i had the same issue, ended up just tilting my seat farther back until the headrest didnt interfere with my head as much. yea it makes me a little farther from the wheel than i like, but i still get control. hands are at 9 and 3 though, unlike in my suv where its one hand at 12.
You can take off the head rest if she prefers a straighter back rest. You just recline the seat enough so you can pull the headrest out. I have done it several times and pushed the seat flat so I could move my six foot Japanese screens to my new apartment.
